Torte Pūce (Owl)

A nut and meringue torte with chocolate cream.

A nostalgic nod to the once much-loved 'Draudzība' torte.

Layers of meringue and chocolate alternate in the torte, complemented by roasted hazelnuts.

The meringue layers are not dry or crumbly, but still slightly soft and a little chewy, and although the torte uses sweet meringue with roasted hazelnuts, it is not overly sweet, as the cream's emphasis is on cocoa, giving it a pleasant balance.

Ingredients: whipped egg whites, icing sugar, nuts.

Cream ingredients: butter, chocolate.
