Although 'Red Velvet' comes from the US state of Mississippi, its appearance and composition have made it a truly Latvian cake.
The made-to-order 'Red Velvet' cake is considered a classic American dessert, also loved by Canadians. Its interesting name comes from its colour and visual appearance, which resembles red velvet.
The cake has a chocolate flavour, since cocoa is added, and an airy texture, achieved thanks to buttermilk.
A classic 'Red Velvet' cake has at least two airy red sponge layers, spread with cream.
The made-to-order cake is usually decorated with the same cream used to fill it. Various creams can be used, such as cream cheese, but Gustavbeķereja's 'Red Velvet' has a milk and butter vanilla cream.
